Do you travel light or heavy?
I travel extremely light. I need to leave room for all of the restaurant and bar menus that I "borrow" from other restaurants.
Cattle or first class?
Business for work and cattle with my family!

What type of suitcase do you carry?
Soft luggage duffel roll bag - it's easy to pack away when not needed.
What's always in your hand luggage?
My trusty refill pad so I can jot down new hospitality ideas, concepts and bar plans.
Are you a planner or last-minute packer?
Definitely a last-minute packer. I can't stand packing and I'm always buying forgotten bits and pieces that I need.
What's the best thing you've brought back from a trip?
I took my girlfriend to Fiji and brought back a fiance.
Favourite or most exciting airport to land in?
Las Vegas is always an exciting landing with the plane dropping quickly on the tarmac. It's a great airport - typically American with Vegas hitting you in the face as soon as you get off the plane.
Best packing tip?
Roll your clothes because you get more in - and fewer creases!
Most memorable trip?
Beijing Olympics and watching super Saturday with our golds and seeing the fastest man in the world. Then it was off for lots of shopping at the markets.
What do you do while on the plane?
First I enjoy a spiced Bloody Mary or two followed by a good action movie, then a good sleep.
