The lightning-fast Roberts, widely regarded as one of the most-promising talents in the game, has something of a chequered past with both South Sydney and Penrith sacking him due to disciplinary issues.
But the young centre was in top form against the Eels, taking full advantage of some sloppy play to run in two long-range intercept tries for the second treble of his career.
The victory maintained the Titans' excellent record against Parramatta, winning eight of the 12 meetings between the two clubs.
Parramatta coach Brad Arthur's side led 16-12 at halftime but it masked an error-strewn opening stanza.
