Three-time winner Lisa Bentley (Canada) finished five minutes behind on the bike stage but showed her class on the marathon run.
She finally clocked a brilliant 9h 03m 20s overall to claim her fourth Australian title.
Australian Chris McCormack won his fourth men's title in 8hr 25min 44sec from compatriot Luke Bell, who was five minutes behind.
