Every mother has passed down through the generations the family's favourite mayonnaise recipe and over the summer a large Agee jar is often found in the fridge.
With wasabi mixed in to taste, it transforms the mayonnaise into a wonderful sauce for fish.
Wasabi, with its intense nostril hit, can be a problem when trying to mix it to suit everybody's heat-ometer. Add the wasabi paste slowly, blend it in and get everyone to taste before adding more. Wasabi mayonnaise is great with smoked fish and this is a very quick and simple way to put a healthy, tasty dish on the table in a few minutes.
Mix wasabi and mayonnaise to taste. Break up smoked fish into longish pieces and warm in a microwave for a minute on high. Pour the wasabi mayonnaise over the slightly warmed fish and enjoy with a crisp sauvignon blanc.
