Side dressing
Often garnishes that are put on top of the fish can overpower some of the flavours so it is a good idea to prepare a garnish that is placed around the fish.
Ingredients:
3 rashers of bacon (with the fat removed)
3 x large tomatoes
1 x onion
1 x teaspoon of crushed garlic
Basil leaves roughly shredded
Salt & pepper to taste
Directions:
Finely dice the bacon and tomatoes.
Cook bacon until crispy brown.
Add onion and cook till soft.
Add tomatoes and garlic then cover for 5 minutes.
Stir in basil adding salt and pepper.
Leave the lid off the pot and remove from the heat once excess moisture has been reduced.
Serve.
