Dean Simon processes a fish at Mt Cook Salmon, which describes itself as the highest salmon farm in the world. The farm, in the Mackenzie Basin, holds about 200,000 salmon at one time, with the fish peaking for harvest at 3 years old. Each day the salmon feast on about a tonne of pellets imported from Tasmania. Most of the fish are destined for export, but staff at the farm also process between 60 and 90 salmon daily, most of which are bought by passing tourists. Asians, in particular, are fond of buying the fish in its freshest state.
