Watermelon and goats' cheese salad
Serves 4
• 400g watermelon, cut into bite-size pieces
• ½ red onion, sliced finely
• 100g goats' feta
• ¼ cup mint leaves
• Fresh ground pepper
• 2 limes, for squeezing
1. Into one large or individual bowls place the watermelon and red onion. Crumble the feta over the salad.
2. Sprinkle with torn mint leaves. Add a grind of fresh pepper and a squeeze of lime.
