CURRIED SIDE OF SALMON
Serves 8-10
• 1kg side of salmon, skin on, pin bones removed
• 1 Tbsp red curry paste
• Zest and juice of 1 lime
• 1 Tbsp brown sugar
• 1 Tbsp fish sauce
• ½ cup chopped coriander
• 1 spring onion, sliced thinly
• Salt and pepper
• Extra coriander and lime wedges to garnish
1. Set oven to 180C.
2. Lay the salmon on a piece of baking paper on an oven tray.
3. In a small bowl mix the curry paste, lime, sugar, fish sauce and coriander. Smother the salmon in it and sprinkle with spring onions, then season with salt and pepper.
