The hunt is on for the ultimate southern cheese roll.

A competition is being run as part of the New Zealand International Science Festival to discover what makes the deep south's long-time favourite snack so good.

Theories include adding mustard and onion soup mix to the recipe.

A panel of judges has been selected to explore the science of the best cheese roll.

The University of Otago Food Science team will scrutinise the winning recipe during the festival in July, and explain what makes it the ultimate taste sensation.
