Makes 1 large
2 Tbs olive oil
2 cloves garlic, chopped
1 small onion, finely diced
1 small head of cauliflower
3 small courgettes
1 Tbs fresh sage, chopped
Salt and pepper
Provolone cheese
Puff pastry
Egg wash
1 Heat a pan, add the oil then the garlic and onion and cook gently for 5 minutes.
2 Cut the cauliflower into very small florets. Add to the pan. Dice the courgettes and add. Add the sage and season. Cover and cook for 10 minutes, then remove from the heat and let cool.
3 Preheat oven to 200C. Spoon the mixture into the centre of a large sheet of pastry. Top with slices of provolone cheese. Brush the edges of the pastry with egg wash, top with a second sheet and seal. Brush all over with the egg wash and bake for approximately 30 minutes.
