Serves 4
1 Tbs butter
3 large quinces
Juice of 2 oranges
1/4 cup water
3 star anise
1 vanilla bean
2 tsp rosewater
1 cinnamon stick
3 Tbs honey
Cream or yoghurt to serve (optional)
1 Preheat oven to 180C. Grease a baking dish liberally with softened butter. Peel the quinces, core and slice. Lay in the baking dish.
2 Pour over the orange juice and water then add the star anise, halved and scraped vanilla bean, rosewater, cinnamon and honey.
3 Cover with a sheet of baking paper and bake for 1 hour. Reduce the temperature to 150C and bake for a further 2 hours or until a deep ruby colour. Can be served with cream or yoghurt.
