I have $20 and four people to feed, I'm making ... large snapper heads steamed or roasted. Dice potatoes, onions and carrots and cook in a steamer with the de-scaled heads for about 10 minutes. Season and devour. Drink stock as a tonic. Or toss oiled heads into a 140C oven on baking paper and slow roast for about a -hour, season, squeeze over lemon juice then pick through flesh and bones delicately with chopsticks or rip into them with your hands. Sprinkle over delicious extra virgin olive oil and eat with loads of steamed green vegetables in season.
