7 egg yolks
100g tomato paste
1 tsp olive oil
750g strong flour (00 flour is recommended)

In an electric mixing bowl, whisk together the eggs, egg yolks, tomato paste and olive oil. Add the flour slowly and, using a dough hook, beat the dough until smooth and shiny. If sticky, you may need to add a little flour. Cut into slabs and wrap in cling film until needed. For other colours, add squid ink (black); turmeric and curry powder (yellow); or spinach puree (green).
