Summer in New Zealand isn’t complete without meals enjoyed outdoors, but alfresco dining has evolved beyond the classic barbecue and tossed salad.

Outdoor entertaining has become an art form, blending culinary creativity with aesthetic flair to create memorable experiences.

Crafting the perfect menu

Food takes centre stage in alfresco dining, and the key is to keep it fresh, seasonal and vibrant. Grazing tables remain a favourite, transforming casual gatherings into magazine-worthy spreads.

These impressive setups feature an assortment of artisan cheeses, charcuterie, fresh breads and crackers arranged alongside fresh and dried fruits, nuts and dips. Vibrant garnishes like edible flowers or sprigs of rosemary add visual appeal.

The idea is to create a self-serve feast where guests can mix and match flavours and textures, making it both practical and visually stunning.

Add homemade dips – think hummus, beetroot dip, or tzatziki – for a personal touch, and include pickled vegetables, marinated olives, or candied nuts to round out the spread.
