2 eggs

400g cold-smoked salmon
250ml (1 cup) mayonnaise
2 tbsp cooked, diced beetroot Gently fold the beetroot into the mayonnaise.
1. Whisk together the egg, milk and sugar. Heat a frypan over a medium flame and melt the butter in it.
2. Dip the bread in the mixture then fry till golden on both sides.
3. Serve immediately with beetroot mayonnaise and smoked salmon.
