Makes 4
1 cup plain flour
Salt and freshly ground black pepper
1 cup milk
1 egg
1 cup cornmeal
16 prawns
Vegetable or light olive oil
1 French stick, cut into 4
3 Tbs mayonnaise
Lettuce
Sliced tomato [ optional]
Lemon
1 Put the flour into a bowl and season. In a second bowl, whisk the milk and egg. Pour the cornmeal into a third. Toss the prawns into the flour, then into the milk and egg mixture and finally the cornmeal.
2 Heat a frypan and cover the base with oil. Cook the prawns over a medium high heat for 30 seconds on each side, depending on size. Transfer to paper towels.
3 Cut the French bread and spread with mayonnaise. Add lettuce and tomatoes then the hot prawns and a squeeze of lemon.
