Serves 4
1 x 2kg watermelon
8 snowpeas
1/4 cup flaked almonds, lightly toasted
200g feta
Fresh mint, sliced or torn
2 1/2 Tbs champagne vinegar
1 Tbs extra virgin olive oil
Black pepper
1 Remove the rind then cube the watermelon.
2 Slice the snowpeas finely then arrange on a platter with the toasted almonds.
3 Crumble over the feta, then the mint.
