Serves 4
4 cups diced watermelon
2 cups finely diced pineapple
1 cup grated coconut - preferably fresh - but alternatively you can use desiccated
1 cup coconut milk
1 cup coconut water
Juice of one lemon
Juice and finely grated zest of one lime
1 Tbs honey
Ice cubes
1 Put the watermelon into a large bowl and gently mash without breaking it up completely.
2 Add the pineapple, coconut, coconut milk and coconut water.
3 Stir in the lemon juice, lime juice and lime zest.
