Serves 4
(This needs to be made at least 12 hours in advance, 24 is preferable.)
• ½ cup water
• 125g caster sugar
• 300g fresh raspberries
• 200g fresh blackberries
• 200g fresh strawberries
• 12 slices of sandwich-sliced white bread, crusts removed
• 1 tsp finely grated lemon zest
• 1 cup cream, whipped
• 2 tsp rosewater
1. Put the water and sugar into a saucepan and bring to a simmer.
2. When the sugar has dissolved, add berries and lemon zest, stir to combine and bring back to a simmer then remove from the heat.
