• 100-150g fresh tuna per person (you could use any fish but we chose tuna because it is pretty good in these parts) • Oil • Salt and pepper • Melon, Paw Paw or Mango • Spring or red onion • Tomato • Radish • Fresh ginger • Lime or lemon • Coriander • Cucumber
(You could also add avocado,orange, apples or any fruit that takes your fancy at the market. The idea is to finely dice a selection of ingredients, thinking about texture and flavour).
1. Toss your chosen ingredients with a little oil and citrus juice. Add a little fresh chilli or sweet chilli sauce if you like.
2. Lightly oil your tuna portions and season each with salt and pepper. Heat up a pan on the element until quite hot and then sear the tuna on both sides (beware of smoke alarms - make sure you have some ventilation). Allow the fish to rest a little and then serve with the salsa.
