There are many versions of rouille. You will find recipes that are more mayonnaise-based and some with saffron. This is a simple rustic method.
• 3 tbsp water
• ¾ cup coarse breadcrumbs made from stale bread
• 3 cloves garlic
• ½ tsp sea salt
• ½ tsp of cayenne
• 3 tbsp olive oil
1. Pour the water over the bread crumbs in a bowl. Mash the garlic with the salt and cayenne in a mortar and pestle.
2. Add the moist bread crumbs and mash into a garlic paste. Add the olive oil in a stream, stirring and mashing until very smooth.
3. Serve with the bouillabaisse and offer thick slices of country-style bread.
