Serves 8
• 3 Lebanese cucumbers, part-peeled, cut in 4 length-wise and diced
• Kernel from one corn cob (run your knife down the cob to remove kernels)
• 2 oranges, peeled and diced
• 2 nashi pears, skin on, quartered, cored and diced
• 2 small fennel bulbs, trimmed and diced
• Half a small rock melon, peeled, deseeded and diced
• Juice of half a lemon
• 1 tbsp avocado oil
1. Mix ingredients together in a bowl and store in a jar or container to transport in your chilly bin. Salsa can be eaten as is or as a side.
