Serves 4
1 pineapple
1 Tbs butter
2 tsp vanilla extract with seeds
2 limes
Frozen buffalo yoghurt or substitute with frozen yoghurt
1 Heat a grill pan. Trim the skin off the pineapple.
2 Slice the pineapple. Heat the butter until bubbling, add vanilla, then the pineapple. Cook for 3 minutes or until golden then turn over and repeat.
3 Zest the limes and add to the pineapple with the juice.
