• Dried Pasta
• Prawns
• Canned diced tomatoes, tomato pasta sauce or the equivalent in fresh tomatoes, de-seeded and diced
• Vodka
• Half a fresh chilli, finely chopped (remove the seeds if you don't like it hot)
• A lime
• A few sprigs of fresh herbs
• Salt and pepper
• Oil for cooking
1. Clean the prawns as described below.
2. Set a pot of water to boil and cook as much pasta as required to feed the number you are cooking for. Drain, drizzle oil over the top and keep warm.
3. Heat oil in a frypan. Toss in the chilli, then add the prawns, tossing these around until just cooked. (You could also use chunks of a firm fish to make this). Remove from the pan and set aside. Keep warm.
4. Add the tomato to the pan, heat through well. Add a good slug of vodka and season with salt and pepper.
