Serves two as a sharing plate
I first came across this hot pepper paste at a small donburi restaurant in London. They were serving it with fried chicken on top of rice. I have used it on all meats ever since.
For the lamb cutlets
• 1 lamb rack
• 2 long sprigs of fresh rosemary
• Freshly ground black pepper
• 8 tbsp hot pepper paste (jochujang)
• 4 tbsp sake
• 2 tbsp mirin
• 1 tbsp soy sauce
• 1 tbsp freshly crushed garlic
• 1 tbsp freshly diced ginger
• Juice of one lemon
For the Sesame Spinach
• 4 large handfuls baby spinach
• 4 tbsp sesame dressing
• 1 tsp black sesame seeds
