Serves 4
• ¼ cup sour cream
• 2 Tbs capers
• ¼ cup dill chopped
• 8 bruschetta
• ½ cup gherkins, sliced
• 200g smoked salmon
• Rocket leaves to garnish
• 1 lemon, to squeeze on top
• salt and pepper, to taste
1. In a small bowl mix sour cream, capers and chopped dill.
2. Spread mixture on bruschetta, and then cover with sliced gherkins.
3. Flake salmon on top, add some rocket leaves, a squeeze of lemon juice and salt and pepper.
