There's nothing new about this but you may get a pleasant surprise when you hit a good seafood market and find a whole range of prawns in various shapes and sizes. Buy as many prawns as you think each person will eat.

• Butter or oil
• Garlic
• Salt and pepper
• Fresh herbs
• Crusty bread
1. Give the prawns a rinse under cold water. With a small, sharp knife, run a slit down the belly of each prawn and slide your thumb along to remove intestines. I like to leave the head and shell on. Once cooked, the prawns are a great pink colour.
2. Heat oil or butter in a frying pan. Add fresh crushed garlic and the cleaned prawns.
3. Toss these around until just cooked. Season well and serve with fresh herbs, such as coriander or parsley. This dish is best served with crusty bread to soak up the juices.
