Pastry
250g flour
1 tsp salt
150g butter
1 egg
50ml iced water
1 tsp lemon juice
Filling
1 Tbs butter
1 Tbs olive oil
2 cloves garlic, finely chopped
1 small onion, finely diced
1 carrot, finely diced
2 courgettes, finely diced
500g chicken thigh meat, sliced
1 Tbs fresh oregano
1 Tbs fresh parsley
1 Tbs wholegrain mustard
3 Tbs flour
2 Tbs chicken stock
3 Tbs cream
Salt and pepper
1 egg
2 Tbs milk
1 To make the pastry; sieve the flour and salt together then rub in the butter until the mixture resembles breadcrumbs.
2 Whisk the egg together with the iced water and lemon juice.
