Serves 8
• 8 small containers
• 800ml almond milk
• 5 tsp powdered gelatine
• 200ml boiling water
• 1 tbsp caster sugar or liquid honey
• 2 tsp pure vanilla essence
• 2 passion fruit
• 1 green kiwifruit
1. Dissolve the gelatine in the boiling water. Add the sugar and stir to dissolve. Mix in the almond milk and add the vanilla essence.
2. Divide the pulp of one passion fruit between the 8 containers and cover with the almond milk mix. Sit containers in the fridge for a couple of hours to set.
3. Peel and slice the kiwi fruit to garnish. Spoon out the pulp of the other passion fruit and store in a small container.
