- Line a 20 cm x 28 cm (8 in x 11¼ in) baking dish with baking paper.
- Bring a saucepan half-filled with water to a boil. Place the kūmara in a colander over the water, cover, and steam for about 15 minutes, or until tender.
- Place the kūmara in a large bowl and mash until completely smooth. Add all the remaining ingredients and mix to combine.
- Transfer the mixture to the prepared dish and spread out evenly. Using the back of a spoon, press firmly over the mixture to pack it down. Place in the freezer to set for about 1 hour.
- To serve, remove from the freezer, sprinkle with extra cacao, if desired, and slice into 24 pieces.
- Store in a sealed container in the fridge for 3–5 days, or in the freezer for up to 3 months.
