Oranges in salads make a great contrast to sharp greens like watercress.
1. Add chunks or segments of orange on to a bed of watercress.
2. Core some pears, leaving their skin on, and slice. Roast with a tablespoon of honey and the juice of a lemon. Cool and add to the salad.
3. Slice some avocado and arrange it across the plate.
4. Make a dressing of a light olive oil or avocado oil mixed with orange juice (3 parts to 1), a large teaspoon of poppy seeds and salt and pepper. Spoon over the salad.
