Cake
180g butter, softened
3/4 cup caster sugar
1 tsp vanilla extract
Finely grated zest of one lemon
3 eggs
1 1/4 cup self-raising flour
1/2 cup ground almonds
Icing
4 Tbs cream cheese, softened
2 Tbs butter, softened
1 cup icing sugar, sifted
1 tsp lemon zest, finely grated
Pears
2 Tbs butter
2 Tbs caster sugar
2 pears, halved, cored and thinly sliced
1 To make the cakes; preheat the oven to 180C. Grease tins or use baking papers. Cream the butter and sugar until pale then add the vanilla and lemon.
