1/3 cup lime juice
1/3 cup fish sauce
1/3 cup brown sugar
11/2 Tbs sesame oil
1 Tbs finely grated lime rind
sea salt and cracked black pepper
1 chinese cabbage, outer leaves removed, cut into wedges
250g snow-pea sprouts, trimmed
3 carrots, peeled and thinly sliced
1/2 cup mint leaves
1/2 cup coriander leaves
In a small bowl, whisk together the lime juice, fish sauce, sugar, sesame oil, lime rind, salt and pepper. Set aside.
Arrange the cabbage on a serving platter and layer with the snow-pea sprouts, carrot, mint and coriander. Spoon over the lime and sesame mixture to serve.
