Our roast vege pita pockets are something we love for busy days because they are comforting, but still light and good for you.
This is a versatile recipe because you can pretty much roast any veges you have in your fridge. This way, the fillings can be seasonal and have all of your favourite goodies inside.
The basil aioli gives it a freshness that cuts through the richness of the slow-roasted vegetables.
Feel free to experiment by adding fresh rosemary or any dried herb you like to the roasting tray.
The prawn and potato salad is something we whip up on a regular basis at our place. We always keep at least one bag of frozen prawns in the freezer and potatoes in the pantry.
In asparagus season, almost all our dishes incorporate this vegetable into them. When it's not asparagus time, we use frozen peas (which we also always have in the freezer) but you can use anything you like - fennel, snow peas or green beans.
The green goddess dressing on this salad really brings it all together and the saltiness of the capers with the freshness of the herbs will give you a little pick-me-up during your day.
Last is our chicken and rice noodle salad. We see versions of this salad in so many cafes and they are always popular so we thought we would share our recipe so you can make it for yourself.
We use cute little takeaway boxes and some chop sticks to pack this salad up before we are heading out.
We think it's a pretty awesome lunch idea for schoolgoers too. We would have loved to pull out our homemade chicken noodle salad packaged up nicely to share with our friends when we were still at school.
Give these light and tasty lunches a go, you'll just need to set aside a little extra time at night to prepare them for the next day.
