4 cooking apples (or use granny smiths), cored
8 amaretti biscuits, crushed
3 fresh dates, stones removed and finely chopped
4 tsp butter, plus 1 tbsp extra
1/2 cup brown sugar
2 tbsp water
2 tbsp sweet muscat vinegar (available from Sabato)
Cream
1. Preheat oven to 170C. Place apples in a baking dish and pierce skin six times with a skewer.
2. Combine biscuits and dates then spoon into apples, topping with a teaspoon of butter.
3. Dot with extra butter, sprinkle with sugar then pour over water and vinegar.
4. Bake for 40 minutes or until soft, spooning over the juices a couple of times during cooking.
Serve hot with some softly whipped cream.
