We know you love your chicken because it is our most searched ingredient on bite.co.nz. When we add the word bake to it, you just can't help yourselves - it's obviously a formula that works for the average Kiwi cook (please don't take offence at that - it's who we are and we're proud of it, right? It can't be bells and whistles every night).
We have some new chicken recipes for you this week. Ray McVinnie is stuffing his chook with pork and roasting it with potatoes. Chicken drumsticks with harissa broth and pearl barley is a hearty, warming soupy/stew and don't go out in to the cold for Chinese, red cook a chicken at home and serve it with steamed greens. Allyson Gofton's salt and pepper roast chicken is simplicity itself, and great for those nights when you have a chicken but not much else.
Between your chicken meals I encourage you to try Zoya Sahrawat's (well Chand's actually) paneer curry and Monday night's Korean lime and sesame beef skewers - ground sesame seeds are the magic ingredient here. They are very easily ground in a mortar and pestle or spice grinder, so don't let them put you off.
Cook something from our Celebrate Matariki recipe collection to acknowledge Maori New Year or just add lots of kumara in to meals this month - Ray shows how in his Get the Idea column.
