KEY POINTS:
CAJUN-SPICED LAMB WRAPS
Serves 4
2 tsp Cajun spice
2 tbsp olive oil
2 lamb leg steaks
4 tortilla wraps, warmed
4 tbsp hummus
4 pieces marinated red capsicum (from a jar), chopped
A handful coriander leaves, roughly chopped
A large handful mixed leaves
Juice of lemon
1) Mix the Cajun spice with 1 tbsp olive oil in a shallow dish. Add the lamb and coat with the paste.
2) Heat the remaining oil in a frying pan. Add the Cajun lamb and fry for 4 minutes on each side until just cooked - it should be slightly pink in the middle.
3) Meanwhile, spread one side of each tortilla with the hummus. Top each with the capsicum, coriander and mixed leaves.
4) When the lamb is cooked, slice into thin strips. Squeeze over the lemon, then divide among the wraps. Roll up and serve.
