Serves 4
1 green apple
1 red apple
Juice of 1/2 a lemon
1 cup celery, sliced
1/2 cup walnuts, toasted
1/4 cup mayonnaise
MAYONNAISE
1 egg
1/2 tsp dried mustard
1/2 tsp salt
1/2 tsp caster sugar
1/4 cup white wine vinegar
1/2 cup olive oil
1. Core and slice both apples. Pour over the lemon juice and chill.
2. To make the mayo; put the egg, mustard, salt, sugar and vinegar in a food processor and blend. With the motor running, drizzle in the oil in a steady stream until mayo has thickened.
3. Combine the apples with the celery, walnuts and mayonnaise.
