250g best quality dark chocolate
500ml milk
200ml cream
½ tsp ground chilli
2 tsp honey
2 Tbs cointreau or amaretto liqueur
1 cinnamon stick
1 Set a bowl over simmering water. Break up the chocolate and put in the bowl with the milk to melt.
2 When melted, remove from the heat and pour into a clean saucepan. Over a gentle heat, whisk in the cream, chilli, honey and liqueur. Put in the cinnamon stick and let infuse in the hot chocolate for 5 minutes before serving.
