Serves 4
4 beef sausages
1 Tbsp olive oil
400g tin tomatoes, chopped
1 Tbs tomato paste
zest of one lemon, roughly chopped
1 Tbsp capers
3/4 clove garlic, finely diced
1 small onion, finely diced
1 chilli, finely diced
1/2 cup red wine
1 tsp castor sugar
Salt and freshly ground pepper
400g spaghetti
Handful finely chopped parsley
1. Heat oil in a pan, add sliced sausage, brown for a few minutes then remove from pan.
2. Add garlic, onion, zest and capers. Stir gently for 5 minutes then add remaining ingredients (except spaghetti) and simmer gently for half an hour.
3. Cook spaghetti according to packet instructions, combine with sauce and add parsley.
