KEY POINTS:
These scallop fritters with Asian flavours are guaranteed to revive a waning winter spirit. Scallops, lime and chilli are lovingly combined to produce a dish for all to savour.
Serves 4
500g scallops
3/4 cup plain flour
3 eggs, separated
1 small onion, finely diced
1 lime leaf, finely shredded
1 tsp diced chilli
3 tsp fish sauce
1 Tbs spring onion, finely diced
1 Tbs fresh coriander, finely diced
Vegetable oil
Sea salt
Lemon
1. Halve the scallops. In a bowl, add the flour and make a well. Gently whisk the yolks into the flour then fold in the scallops.
2. Add the onion, lime, chilli, fish sauce, spring onion and coriander and gently mix. Whisk the egg whites until peaks form then fold into the mixture.
3. Heat a little vegetable oil in a fry pan and when hot, add spoonfuls of the mixture. Let brown on one side before turning. Sprinkle with sea salt and a squeeze of lemon.
