Roasted nuts with smoked kelp, lime and chilli sweet paprika
Makes 4 cups
4 cups assorted plain raw nuts (I used half brazil and half almonds)
2 Tbs olive oil
1 Tbs smoked kelp (look out for Pacific Harvest brand, pacificharvest.co.nz)
Salt
2 tsp chilli powder
Finely grated zest and juice of one lime
1. Preheat oven to 180C. Put the nuts into a large bowl. Pour over the oil and sprinkle with kelp and salt to taste.
2. Add chilli powder and the lime zest, then mix together with your hands until the nuts are well covered. Spread onto a baking tray and roast for 10-15 minutes or until golden. Remove, let cool then store in an airtight container.
Garlic and sesame pita crisps
1 packet of small pita breads
3 cloves garlic
Avocado oil
Sweet smoked paprika
Sesame seeds
Flaky salt
1. Preheat oven to 180C. Halve then slice the pita breads into bite-sized pieces.
2. Put into a large bowl. Grate the garlic over then drizzle generously with avocado oil. Sprinkle with paprika, sesame seeds and salt. Toss well with your hands.
3. Spread out on baking trays and bake for approximately 15 minutes or until golden, turning once. Let cool before storing in an airtight container.
