Serves 2
4 thick slices of butter bread or brioche, toasted
2 pears, cored and sliced
1 Tbsp butter
100-150g ricotta, depending on preference
2 tsp cinnamon
1 Tbsp manuka honey
1. Toast the bread and set aside. Heat a pan, add butter and honey and when it bubbles add the pear slices. Cook for 5 minutes until slightly softened.
2. Spread bread with ricotta, then pile on pears and any juices from the pan. Sprinkle with the cinnamon.
