Makes 12
120g butter, softened
2 Tbs icing sugar
1/2 tsp vanilla extract
50g self-raising flour
50g cornflour
Icing
1 Tbs butter, softened
6 Tbs icing sugar
3 tsp lemon juice
Pulp of 3 passionfruit
1 Preheat oven to 170C. Cream the butter and the icing sugar with the vanilla until pale. Sift the flour and cornflour together then mix with the creamed mixture until well combined.
2 You can roll into small balls and place on greased oven trays, pressing down with a fork or the mixture can be piped. Bake for about 15 minutes or until pale golden.
3 Beat the icing ingredients together well then use to sandwich together the cold biscuits. Dust with icing sugar.
