KEY POINTS:
Serves 4
Olive oil
4 fillets of Hapuku
Vanilla and herb sea salt (I used Equagold available from gourmet food stores)
175g jar of artichokes in olive oil
Lemon wedges
1. Heat a fry pan then add one tablespoon of olive oil. Season each fillet with vanilla salt and pan fry two at a time. Cook for 3 or 4 minutes on each side depending on the thickness of the fish.
2. Transfer the fish to serving plates. Add the jar of artichokes to the pan and warm. Serve the artichokes and lemon with the fish.
