KEY POINTS:

1 1/2 cups water
1/2 cup dessert wine
1 1/2 Tbs manuka honey
2 tsp orange blossom water
8 apricots, halved
1. In a saucepan, combine the water, wine, honey and orange blossom water.
2. Over a gentle heat, stir to dissolve the honey then simmer for 5 minutes. Turn the temperature down to create the barest simmer.
3. Lay the apricots in the liquid and after 5 minutes remove using a slotted spoon. Increase the heat and boil for 5 minutes then cool. Serve with Greek yoghurt, cream or vanilla bean ice cream.
