Serves 4
4 duck eggs
4 cups water
1/2 cup soy
1 Tbsp honey
2 pieces tangerine peel
One leek stalk
2 cloves garlic
Pinch salt
1. Simmer the eggs, covered with water, for 10 minutes, cool. Gently crack the shells by rolling the eggs on a hard surface, but don't peel them.
2. Put all ingredients with the eggs into a saucepan and simmer for 30 minutes. Cover and let stand overnight, then drain and peel.
3. Serve with small bowls of soy, finely diced chilli, Sichuan pepper and spring onions.
