KEY POINTS:
Serves 4
3 cups grapes
2 Tbs olive oil
150g haloumi cheese, sliced
1 Tbs za'atar (a Middle Eastern spice mix available from gourmet food stores)
1 Tbs pinenuts, toasted
3 handfuls assorted salad greens
1/2 cup coriander leaves
Juice of one lime
Drizzle of extra-virgin olive oil
1. Rinse the grapes, halve and remove the pips, then slice.
2. Heat a frying pan, add the oil and fry the slices of haloumi a minute on each side or until golden. Remove from the pan, sprinkle with za'atar and set aside.
3. In a large bowl, add all ingredients and carefully toss, add any olive oil left in the pan, adding an extra drizzle if necessary, then plate.
