Serves 6-8
150g butter
150g caster sugar
Zest of one lemon
3 eggs
150g self-raising flour
1 cup roughly chopped toasted brazil nuts
2 cups peeled and chopped golden delicious apples
Glaze
juice of two lemons
2 tsp soft butter
3 Tbsp sifted icing sugar
1. Preheat oven 180C. Grease a 22cm cake tin. Cream butter, sugar and zest until light then add eggs and mix well. Fold in flour, nuts and apples then spoon into tin and bake for about 45 minutes or until a skewer inserted tests clean.
2. Combine glaze ingredients in a small pot and warm through, stirring, then pour over warm cake.
