Serves 4
3/4 cup rolled oats
1 Tbs oil
1 Tbs honey, either runny or melted
4 ripe peaches
2 cups chilled Greek-style yoghurt
1 Preheat oven to 180C. Mix the oats in a bowl with the oil and honey.
2 Pour the oats on to a small oven tray, spread out and toast for approximately 15 minutes or until golden. Remove and let cool.
3 Wash and slice the peaches. Place on plates with yoghurt topped with oats, extra honey to drizzle on the side.
